Who else loved eating ramen noodles in college? Seriously. I knew they were terrible for me, but I loved those noodles. It was comfort in a bowl. So when I saw a pack of millet & brown rice ramen noodles at the store, I knew I had to try them. Turns out they are delish. So if you are in the mood for a simple, easy ramen noodle recipe that is healthier than your college days, this will be right up your alley. Ok, so it’s not stick it in the microwave easy, but it’s close enough.
Ingredients for Easy Ramen Noodle Recipe
Serves 1
- 1 Lotus Foods Millet & Brown Rice Ramen Cake
- 1/4 cup of chopped up scallions (or more to your liking)
- 1 cup of vegetable broth – I use Trader Joe’s Organic Hearty Vegetable Broth – Bonafide is also great
- Himalayan Salt and/or Dulse Granules to taste – I add a good amount of dulse with a sprinkle of salt
- a shake of Red Pepper Flakes
How To Make Easy Ramen Noodles
- Make 1 ramen cake according to the package less 1 minute cooking time. This is because you will be cooking the noodles in broth again for about a minute after rinsing them.
- Strain and rinse with cool water.
- Put the rinsed & well strained noodles back in the heated pan with 1 cup of vegetable broth, 1/4 cup scallions (or more), a good pinch of Himalayan salt and/or Dulse, and a shake of red pepper flakes if desired.
- Turn on high heat for about a minute until it comes to a low simmer. Time this minute so you don’t overcook them.
- Take it off the heat and serve in a bowl. Add additional salt, dulse, or red pepper flakes to taste. Enjoy!
Riane’s Tidbits
Don’t go right to making the noodles in the broth and skip the boiling in water & rinsing part. I tried it once. 😂 Muck.
Read the ingredients on store bought broth. Always read ingredients on anything packaged. The majority of broths contain less than desirable ingredients mixed in. I often grab the Trader’s Organic Hearty Vegetable Broth. Ingredients: Water, organic carrots, organic celery, organic tomatoes, organic leeks, sea salt, organic onion powder, organic garlic, organic parsley, organic bay leaves, organic thyme. Let me know if you have any other store bought broth suggestions below. I know not everyone has a Trader Joe’s by them, but Bonafide Vegetable Broth is another great one with pure ingredients.
What is dulse? It’s a salt alternative that contains iodine and helps detoxify heavy metals from your body. It is a sea vegetable so it has a slightly fishy taste. It’s an acquired taste, but I find it goes perfectly in ramen! I usually add a heaping teaspoon of dulse to the ramen and then sprinkle in the smallest bit of salt to cut the slightly fishy taste. I tend to use dulse mainly in smoothies since there are enough ingredients that overtake the taste it. This ramen just happens to be a dish that works really well with it. Dulse is a staple for me due to the iodine and its ability to detox heavy metals from your body. I would start with small amounts until you get used to the taste. Read more about it here and here. Can’t get enough salt? Read here.
Millet is one of the best gluten free grains you could choose. Gluten free oats are right there with them. These grains do not feed pathogens according to Medical Medium. – Medical Medium Cleanse to Heal
Mushroom Ramen is made easy by sticking to this recipe, but replacing the vegetable broth with Pacific Mushroom broth, and adding Trader Joe’s Umami Seasoning Blend. So good as well.
Tell me if it hits the spot for your ramen fix!
