Method
- Add all the ingredients to your blender and blend until creamy. I use my nutribullet for this. Taste it and adjust to your taste buds (lemon/salt). If you need a tad more liquid, add in more lemon juice or water. It is meant to be a thicker dressing though. Toss with a zoodle salad and enjoy!
Notes
Makes about 1 cup of dressing - enough for 2-3 zoodle salads. Use within 2 days.

- 1 zucchini, skin peeled and then julienned into strips

- handful of sliced grape tomatoes, cherry tomatoes would be ideal if you have them

- large handful of arugula

- ground pepper

- optional, fresh basil if you have on hand
