Cashew Queso Dip

This dairy free cashew queso dip tastes legit. Cheese can be a tough one to minimize or eliminate, but thankfully cashews come to the rescue in so many recipes. I'm still figuring out better cheese alternatives for certain things, but thankfully I've got queso down now and now you will too.

Ingredients
  

  • 1/2 cup unsalted raw cashews soaked in a bowl for 45 minutes in super hot water from the tea kettle
  • 1 cup salsa of your choice store bought or homemade
  • 1/8-1/4 tsp turmeric for color
  • 1/2 jalapeno seeded
  • 3 small shakes of cayenne
  • pinch of Himalayan salt or sea salt
  • 2 TBSP water

Method
 

  1. Soak 1/2 cup cashews in a bowl of super hot water from the tea kettle for 45 minutes.
  2. Drain the cashews and add them to a blender. I use the nutribullet for this.
  3. Along with the cashews, add in 1 cup salsa, turmeric for color, jalapeno & cayenne for some heat, a pinch of salt, and a little water to thin it out some. Blend & Enjoy!
