Cabbage Vegetable Soup

This cabbage vegetable soup was inspired by the weight watchers cabbage soup. This is one of those soups you can play around with different vegetables depending on what you have on hand and it always works out. It's a simple soup; nothing over the top, but somedays it hits the spot.

Ingredients
  

  • 1 yellow onion chopped
  • 4 garlic cloves minced
  • 3 sticks/ribs celery sliced
  • 1 large or 2-3 small carrots coined (I use orange and yellow)
  • 2 32 oz cartons vegetable broth clean brands - Trader Joe's Hearty Vegetable & Bonafide
  • small head of green cabbage or half of a large head chopped
  • 3 TBSP tomato paste
  • 2 tsp dried oregano
  • 2 tsp dried basil
  • salt and pepper to taste
  • optional - add a smidge of lemon to cut down on salt and/or brighten the flavor a bit

Method
 

  1. Pour a little broth in a large stockpot and heat on medium to high heat. Sauté the onion and garlic for around 5 minutes and then add in the celery, carrots, a splash more of broth, and sauté for about 15 minutes more.
  2. Once the celery and carrots have sautéed for a bit, add in the cabbage, remaining broth, tomato paste, oregano, and basil. Give it a good stir. It will look like a lot of cabbage, but it cooks down. You can always use less if you wish.
  3. Get it to a good low boil. After this, turn down the heat to keep a good simmer and put the cover on for about 30 minutes. Stir it here and there. Add in salt and pepper to taste and enjoy! Squeeze in a little lemon if you desire.
