- Pour a little broth in a large stockpot and heat on medium to high heat. Sauté the onion and garlic for around 5 minutes and then add in the celery, carrots, a splash more of broth, and sauté for about 15 minutes more.
- Once the celery and carrots have sautéed for a bit, add in the cabbage, remaining broth, tomato paste, oregano, and basil. Give it a good stir. It will look like a lot of cabbage, but it cooks down. You can always use less if you wish.
- Get it to a good low boil. After this, turn down the heat to keep a good simmer and put the cover on for about 30 minutes. Stir it here and there. Add in salt and pepper to taste and enjoy! Squeeze in a little lemon if you desire.
