Avocado Herb Salad Dressings (2 Versions)

These avocado herb salad dressings are super simple and quick to make for your summer salads. You could also make them as a veggie dip! Avocado gives it the thicker creaminess, the herbs adds the freshness, and the garlic & lemon or lime add some zip! The Italian parsley option below is a classic, but the basil lime option is extra flavorful.

Ingredients
  

  • 1 avocado
  • 1/2 cup fresh flat leaf/Italian parsley
  • 1 garlic clove
  • 1/4 cup + 1 TBSP cold water
  • 1/4 tsp sea salt more to taste
  • 1/2 lemon juiced optional tsp lemon zest
OR BASIL LIME OPTION - substitute 1/2 cup parsley for 7 basil leaves and the 1/2 lemon for 1 whole lime

Method
 

  1. Add all ingredients to a high speed blender and blend. It is a thicker dressing, so you will need a spatula to get it all out. Toss with a salad or use as a veggie dip. ENJOY!
