Coconut Vanilla Date Balls

Date balls are one of the best and easiest options for a healthy sweet treat. Not to mention they are so quick to make! These coconut vanilla date balls taste a bit sweeter than many date balls due to the coconut shreds & vanilla in them. They are generally a crowd pleaser!

Ingredients
  

  • 1 cup walnuts 1/2 hazelnuts and 1/2 walnuts taste good in these too
  • 1/2 cup unsweetened shredded coconut
  • 1 cup soft medjool dates remove pits prior
  • 1/2 tsp alcohol free vanilla extract or vanilla powder

Method
 

  1. Pulse the walnuts & coconut in a food processor until it becomes a crumbly mixture.
  2. Add in the pitted dates and vanilla. Pulse first to get the dates broke down & then run until combined. Be careful not to over process as it’s easier to roll into balls without the dough being too oily. It’s still manageable, but sticky dough is ideal. >If you double the batch, you’ll most likely need to open the food processor to scrape down the sides during processing.
  3. Roll into balls & roll into optional coconut shreds.
  4. Store in the fridge or freezer to harden. I freeze mine and then let them sit out a bit before serving. Enjoy!
