Method
- Pulse the walnuts & coconut in a food processor until it becomes a crumbly mixture.
- Add in the pitted dates and vanilla. Pulse first to get the dates broke down & then run until combined. Be careful not to over process as it’s easier to roll into balls without the dough being too oily. It’s still manageable, but sticky dough is ideal. >If you double the batch, you’ll most likely need to open the food processor to scrape down the sides during processing.
- Roll into balls & roll into optional coconut shreds.
- Store in the fridge or freezer to harden. I freeze mine and then let them sit out a bit before serving. Enjoy!
