Hemp Seed Tabbouleh

This hemp seed tabbouleh (also spelled tabouli), is the perfect dish to make when you want some Mediterranean flavors. The fresh taste of parsley and mint, the juicy tomato, the crunch from the cucumber, all marinate perfectly together with the lemon juice. Hemp seeds replace the more traditional bulgur wheat and make this dish gluten free. It's a great summer dish to eat by itself or as a side. Serve it alongside some hummus, veggies, and gluten free pita crackers for a great little appetizer.

Ingredients
  

  • 1 bunch of parsley chopped finely
  • 1 cup of fresh mint leaves chopped finely
  • 2 roma tomatoes chopped small
  • 1 cucumber peeled and chopped small
  • 1 small red onion or 1/2 large red onion diced small
  • 1/2 cup of manitoba harvest hemp seeds
  • 2 lemons juiced
  • 2 tbsp of olive oil
  • ground pepper
  • Himalayan pink salt or sea salt to taste

Instructions
 

  • Wash and chop the parsley, mint, tomatoes, cucumber, and red onion according to above. Add it all to a large mixing bowl and stir together.
  • Add in the hemp seeds, juice from two lemons, and olive oil. Stir well.
  • Taste the dish prior to adding in salt & pepper. Lemons naturally enhance the flavor and add a salty taste. You won't over salt by tasting it first. Once you add in the salt & pepper, stir well.
  • Serve & Enjoy.
