Vegan Baked TikTok Feta Pasta

You may have seen the TikTok pasta that went viral early this year and understandably so. It’s incredibly easy to make and so crazy good. Of course I took the original recipe and figured out how I could make it a bit healthier. It does not sacrifice on flavor either. I made it for my husband & I for Valentine’s Day the first time and we were so surprised at how good it was. It’s a fairly rich pasta with the cheese, garlic, olive oil, and acidity from the tomatoes, so it feels like a special occasion meal. I swapped the regular feta with SO much olive oil in the original recipe for a vegan feta with a lot less oil. I think it tastes even better (I tried the orginal)! Here is the Vegan Baked Tiktok Pasta Recipe:

Vegan Baked Feta TikTok Pasta
TikTok Pasta Ingredients

Ingredients

  • 16 oz grape tomatoes
  • 1 package Violife Feta Cheese
  • 8 garlic cloves
  • 2 Tbs olive oil
  • 1/4 tsp crushed red pepper flakes (add more for more of a kick)
  • ground pepper to taste
  • sea salt to taste
  • large handful of basil leaves
  • 1 box of Jovial gluten free pasta (or your choice of pasta) – spiral, rotini, farfalle types

Instructions

  1. Preheat the oven to 400.
  2. Once the oven is preheated, bring a large pot of water to boil on the stovetop for your pasta.
  3. In a baking dish, add the tomatoes and garlic and toss with the olive oil to coat. Put the Violife Feta Cheese (discarding the excess liquid in the package) in the middle of the dish. Sprinkle the entire dish with crushed red pepper flakes, a little sea salt, and some cracked ground pepper. Bake for around 15-20 minutes until the tomatoes are just starting to brown and ready to burst. Meanwhile, cook your pasta according to it’s package. Time it so everything will be done around the same time.
  4. Take a fork and carefully mash the tomatoes and stir the entire mixture together for your sauce. Add your cooked pasta to the dish and stir until well combined. Stir in a handful of chopped fresh basil leaves. Enjoy!

Tip: If you overcook the feta and it’s a bit too liquidy, it’s OK. Just let it sit out of the oven for a bit and it will start to solidify more. Once it’s a bit more solid, mash down the tomatoes and stir in your cooked pasta. Overall, it is a more oily and wet pasta though. Make sure your GF noodles are more dry before adding it to the mixture as well.

Riane’s Tidbits:

Regular feta:

If using regular feta, you will need more olive oil and about a 15 min longer cooking time. The original recipe calls for 1/2 cup of olive oil. It’s too much olive oil for the vegan feta as the vegan feta already has coconut oil in it. Cut down on dairy, fat, and time by making it vegan! Original Recipe Creator Here

Don’t use an excess of tomatoes:

Don’t be tempted to use more tomatoes just because you have them. Stick to the 16oz. Otherwise, I find it adds too much liquid from the extra juice of the tomatoes.

Gluten-Free pasta

If you don’t already use gluten free pasta, don’t let this dish be your first time using it. The specific Jovial pasta I use takes a bit of finesse. After cooking it according to the box, I drain it and spread out the pasta on two large plates so it dries out more. If I don’t do this, I find it’s too wet for this recipe. Chickpea and lentil pasta cook a bit easier than brown rice pasta (I find), but I like the taste of Jovial pasta in this one. The elbow noodle of Jovial cooks extra easy though!

If your feta is too melted when you pull it out, just let it sit and cool for a bit before mashing the tomatoes. It will solidify more.

Vegan Baked TikTok Pasta

I took the original famous TikTok Baked Feta recipe and figured out how I could make it a bit healthier. It does not sacrifice on flavor either!
