The ingredients to this sweet potato broccoli rabe soup were what was left in my fridge one day. I was not expecting much, but it turned out to be a good one. It is a unique tasting soup, but I found the flavors pair together well. The sweet potatoes and more bitter broccoli rabe are a bit of yin and yang. The acidic taste from lemon and fresh tomato along with thyme give the soup a tasty broth. If this still sounds good to you, proceed. Ha. Oh, and it’s extra easy to make. I throw it all in one pot; no sauteeing or anything. It works out for this one.
Broccoli Rabe is ideal for this recipe. However, if you can’t find broccoli rabe (I get it from Whole Foods), the next best thing would be one bunch of broccolini and a small bunch of mustard greens or another bitter green. Regular broccoli, cut fairly thin, and 1/2 bunch of dino kale would work in a pinch too.
Sweet Potato Broccoli Rabe Soup
Ingredients
- 1 large yellow onion, diced
- 3-6 raw garlic cloves, minced, I use 6
- 1 inch raw ginger, skin removed and finely chopped, optional add in
- 3 medium to large sweet potatoes, cut into small chunks, I leave the skins on organic
- 1 broccoli rabe bunch, roughly chopped, ends trimmed off, use everything else
- 2 large ripe tomatoes, I leave them whole and carefully squeeze them in with my hands
- 3-4 thyme sprigs, the thyme falls off when it cooks, just remove stems prior to serving
- 1 small lemon, juiced, you could always start with 1/2 and see what your tastebuds want
- Himilayan or sea salt, to taste, the lemon & tomato may be enough natural salt for you in this one
Method
Put a large empty soup pot right by your cutting board. As you are prepping your ingredients, add them right to the pot. Onion, garlic, ginger, sweet potatoes, broccoli rabe, tomatoes, and thyme sprigs. Add in 64-72 oz or 8-9 cups of water depending on how big your sweet potatoes are.
Place the pot on medium to medium/high heat until you get a good simmer going. Now cover and cook for 30 minutes. You want to maintain a low boil/good simmer, but you don’t want it overly boiling.
At minute 30, squeeze in the lemon, and check on the potatoes. It may be close to ready, but if you have the time, simmer an addtional 20 minutes to bring out the broth flavor. Cover off, on, or tilted, depending on your potatoes. I leave it covered as I don’t mind if the potatoes fall apart some. Once ready, stir in salt to taste if using and enjoy!
