
I generally eat more simply during the day more days than not. I also eat all raw/mostly raw until dinner time more days than not as well. Digestion takes so much energy and eating lighter during the day frees up energy. I like feeling energetic; I don’t want to feel like I need a nap after lunch. This does not mean I go hungry either! I eat plenty to satiate and nourish myself. Eating more whole raw, life giving foods ensures I’m getting plenty of fiber to fill me up. I think the latest statistic is that 95% of Americans don’t get enough fiber…. I also used the word generally, since that is key. Even though eating light to heavy and raw during the day to cooked at night is my norm, I’m not a stickler on it. If I want cooked leftovers for lunch or I’m out with family/friends/traveling, I absolutely have and enjoy whatever floats my boat. This simple healthy lunch salad is just an example of a lunch I’ll eat at home during the week.
Simple Healthy Lunch Salad
1 serving – this is what I used, but just use whatever amounts needed to nourish you
Ingredients
- 1/2 bag organic arugula or a few big handfuls
- 1/2-1 large organic cucumber, high water content helps fill us up more too
- 1 or 2 larger tomatoes or a handful of grape tomatoes
- 2 medjool dates
- 1/2 avocado
- 1-2 garlic cloves, chopped up
- fresh thyme or rosemary
- 1 lemon, juiced
- small drizzle of raw honey
- cayenne
- Celtic sea salt and/or dulse – I buy these flakes too.
- ground pepper
- optional, sesame seeds
Method
Add everything to a large bowl. Mish mash everything with a fork or tongs so that the avocado, lemon juice, and honey coats everything well enough. ENJOY!
