This roasted broccolini salad with sweet herby avocado cream as the base is the perfect salad for dining alfresco this summer. Broccolini aka baby broccoli is more tender and milder in taste compared to regular broccoli. This dish might turn you (and me) into a broccoli lover yet. It really is delicious. It can stand on it’s own as a light summer meal, but it would also be great served alongside some baked salmon if you eat fish.
Roasted Broccolini Salad With Sweet Herby Avocado Cream
Serves 2 as a light meal or 4 as a side
Ingredients
- 1 large bunch organic broccolini
- 2 garlic cloves for baking plus 1 clove for avocado cream
- 1 really ripe avocado
- 1 pitted medjool date
- 2 green onions, white and green parts
- 1/2 -1 lemon
- handful of fresh parsley
- handful of fresh dill
- sea salt
- 1/3 small red onion, thinly sliced
- 2-3 TBSP hemp seeds
Method
- Preheat oven to 425. Line a large baking sheet with unbleached baking paper.
- Rinse the broccolini under cold water. Cut off the very ends and tear off any leaves. Slice them lengthwise in half or even quarters depending on their thickness. I leave some of the pieces long since they look extra pretty this way, but I cut about half in 4 so it makes the dish easier to eat. Roughly chop 2 garlic cloves.
- Spread the broccolini out onto the baking sheet. Sprinkle the garlic on top. Make sure the broccolini is spread out so it roasts more than it steams.
- Bake for 10 minutes, flip over, and do another 5-10 minutes until roasted with your desired crunch.
- Meanwhile make the thick avocado cream base (it’s not a pourable dressing). In a small blender like a nutribullet or small food processor, blend the following: 1/2 cup water, 1 avocado, 1 garlic clove, 1 medjool date, 2 green onions, 1/2 lemon, handful of fresh parsley, handful of fresh dill, and a pinch of sea salt. Taste it and see if you want the additional 1/2 lemon or not.
- To each serving bowl or plate, divide the sweet avocado cream and spread out as a base for the broccolini. Add the broccolini and roasted garlic on top along with some sliced red onion. Sprinkle hemp seeds over the top of each serving. Enjoy the deliciousness! You’ll probably need a small sharp knife to cut the broccolini.
