Quick Coconut Yogurt Parfait

This quick coconut yogurt parfait makes a super easy snack, breakfast, or another meal. You can make it as elaborate and pretty as you want to. Alternate more layers than shown, add more fruit, or use a clean store-bought or homemade granola instead of raw oats to make it a bit more flavorful.

Coconut yogurt is a great source of natural probiotics which are beneficial for a healthy gut and microbiome. Not all coconut yogurt is beneficial though as some have very poor ingredients, so just like everything else, be sure to read the ingredients. Plain yogurt will generally have the cleanest of ingredients, but you could always add in honey and fruit to sweeten it up. An actual granola mix will sweeten it up as opposed to raw oats as well. If you have the time, this recipe is really good.

Depending on where you live and what is available, these are my top 3 picks for coconut yogurt:

  • Cocojune – thick and decadent
  • Cocoyo – thinnest of the three, a great one when you need to make dressings that require yogurt
  • Culina – super thick and decadent
I packed this jar for my husband in about a minute. I left it as is, but of course before eating, he stirred it so everything was more combined.

  • raw oats (I buy from Costco), store bought granola, or homemade (my favorite)
  • coconut yogurt
  • fresh berries
  • ceylon or regular cinnamon
  • raw honey

Method

Layer whatever proportions of the above as you desire. Take the time and ENJOY it!
