Do you want a warm, creamy, and comforting meal quick enough for a weeknight? Give this quick cashew alfredo pasta a try. You can use the alfredo sauce with any pasta mix and fixings of your choice. Last week I paired it with mushrooms and then again with mushrooms and peas. Both so good.
Quick Cashew Alfredo Pasta
If you are making a bigger portion of pasta (I used 2/3 of the bag) or using a large blender, use 1 cup of cashews, 3/4 cup water, 1/2 lemon, & 1/2 tsp salt to start.
Cashew Alfredo Ingredients
1/2 cup raw cashews
1/4 lemon squeeze
1/2 cup hot water from the tea kettle, leave the kettle on the heat as you might need a touch more
1/4 tsp garlic powder or a few shakes
1/4 tsp onion powder or a few shakes
1/8 tsp thyme or a small pinch
1/4 tsp salt to start, I sprinkle more on top of the pasta too
Few grinds on the pepper mill or a few shakes
Method
Add everything to a small blender and let it sit while you make your pasta. This allows the cashews to soak in the hot water which makes it a bit creamier. You can also soak cashews in a bowl of room temp water for 1-2 hours if you think of it ahead of time. Once your pasta is ready, blend the sauce. Add a splash more of water need be, but start slow as you want it thick and more flavorful. If needed, dash in more salt. Pour and mix into your pasta. Enjoy!
