
This parsley quinoa salad is extra fresh. It just feels like a good summer salad. I threw the ingredients together on a whim, so there are no measurements for this one, but they are not needed. It will taste great with whatever proportions you do. You can always look at the pictures for a visual aid too! If you want it extra extra fresh, add in a lot of parsley as shown in the pictures. You could also go heavier on the quinoa to bulk it up even more. This would make a great salad for summer gatherings and even batch lunches.
Parsley Quinoa Summer Salad
Zero measurments here. Just mix any amount of the following ingredients and mix together well. It’s all fresh and good. It will taste delish.
- curly parsley
- quinoa
- chickpeas
- radishes
- grape tomatoes
- sundried tomatoes, adds a good flavor to this salad
- artichokes, adds loads of flavor as well, I rinse a can of artichokes to minimize the citric acid
- fresh lemon juice
- any seasonings you wish: I used dried dill, a little cayenne, and kelp granules (a good source of iodine) in place of sea salt
