Potatoes are an incredible healing food to include into our diets more often. They contain a high amount of lysine, which helps combat viruses that we are all exposed to. Potatoes also have a calming, grounding effect on the body. In this fast-paced world, we could all use more potatoes! These oven baked potato slices are a delicious, easy way to have them more often.
These oven baked potato slices can mold into whatever you want them to be. Potato toast, potato bread, potato fry, or potato chips. It really just depends on how thin you cut the potatoes as to how you want to use them.
A perforated pan speeds up the cooking time and helps make them a bit more crispy. Also, the thinner you slice them, the less time it takes to bake, and the crispier they will be. Just flip them over mid-way if you don’t have a perforated pan.
There are so many ways you can use these Oven Baked Potato Slices:
- Eat them as is!
- Serve them with some homemade guacamole and/or salsa. A quick mash of avocado, garlic, cayenne, sea salt, ground pepper & cut up tomatoes is easy & delish. So far my favorite way. 😊
- Put a mixture of fresh veggies & herbs on top of them similar to a bruschetta. Tomatoes, minced garlic cloves, onion, sea salt, ground pepper & squeeze of lemon juice makes a simple bruschetta topping.
- Use two of them as your “bread” for a veggie sandwich. 1/2″ width is a good “bread” width for a sandwich
- Load them up with your favorite healthy pizza toppings.
- Top them with healthy nacho ingredients. Diced avocado, chopped tomatoes, raw onion, lime juice, cilantro, jalapeno, and a drizzle of garlic cashew aioli (sour cream substitute). Blend together 1/2 cup of cashews, 1 tbsp of olive oil, 1 large or 2 small garlic cloves, juice of 1 lemon, 1/8 tsp of sea salt, 1/2 cup of water – a Medical Medium Recipe. Throw some black beans in the mix if you want too!
If you want them to look more golden & pretty in color, sprinkle on paprika along with your other spices.
Oven Baked Potato Slices
Ingredients
- 3 Organic Russet Potatoes
- Seasonings of your choice – Garlic Powder, Onion Powder, Oregano, Fresh Minced Garlic, Thyme, Paprika, Sea Salt & Pepper are all good option to choose from. I usually do garlic powder, onion powder & paprika for some color.
Instructions
- Preheat the oven to 400.
- Line a large baking pan with baking paper. It’s easy cleanup, allows you to skip oil (unless you want it), but more importantly the paper helps keep heavy metals from leaching into your food if you are using a metal pan. You do not need baking paper if using a ceramic baking pan.
- Wash the whole potato & then slice them 1/4″ in size. You can slice the width of the potato for smaller rounds, or the length of the potato for bigger slices. Peel the skins if you are not using organic potatoes.
- Line them on the baking sheet and sprinkle with your desired seasonings.
- If using a perforated pan, bake for around 25-35 minutes until browned a bit with a crisp. Bake for around 45 minutes flipping over halfway if using a regular baking sheet. The time also depends on how thin/thick you cut the potato slices. Top them with your preferred toppings. ENJOY!
