
Have you ever made delicata squash fries? If not, you are in for a treat. Like a real addiction kind of treat. They taste somewhat like a sweeter potato chip when baked to the perfect crisp. A delicata squash is slightly less sweet than a butternut squash. With the addition of sea salt, it takes on it’s own sweet & salty flavor once baked. A savory treat! My girlfriend introduced me to this slight obsession last year. Before that, I never even took notice to a delicata squash at the store. Now with Fall here, you should see them at your grocery stores and farmer’s markets any day now. Once you see them, you might want to grab a few. They tend to fly off the shelves.



Ingredients:
Serves 2
- 1 delicata squash
- 1 1/2 tsp avocado oil or olive oil
- 1/4 tsp of sea salt – more to taste
- fresh ground pepper
How To Make Delicata Squash Fries:
- Preheat the oven to 450.
- Wash the outside of the squash really well as you’ll be eating the peel.
- Cut off both ends of the squash.
- Cut the squash lengthwise down the middle, scoop out the seeds, and cut into 1/4″ slices.
- Put the slices in a mixing bowl, drizzle on olive oil and sprinkle in salt & ground pepper. Mix it well with your hands.
- Pour the slices out onto a baking sheet lined with parchment paper. Spread them out so they are all flat.
- Cook for about 25 minutes, flip over, and cook for about 15 more minutes until your desired crisp. Oven times vary though, so watch them closely towards the end.
Riane’s Tidbits:
Cut the slices fairly even so they cook evenly. If you cut them thicker, they won’t be as crispy. They are still delicious this way though. Thicker slices would be great to throw on top of a salad with arugula, kale, or spinach, dried cranberries or pomegranate seeds, and a dressing made of a little raw honey or maple syrup, lemon juice, olive oil, sea salt & pepper. When making delicata fries though, I prefer to cook them until just short of burning them. Some of the edges do get a little burnt.
Ovens vary widely. My Ikea oven takes a bit longer than the average to bake. I do keep this in mind when giving you baking times. However, if your oven is extra efficient, you might not need to bake them as long. I use unbleached, chlorine free parchment baking paper on my baking sheets.
For most people this serves 2, but if you are using this as your meal, you can easily eat 1 by yourself. Well, I can. HA.

These definitely are a fall treasure! We stocked up on five of these squash a couple weeks ago! Yum!
YES! So glad your store had plenty to stock up on! It doesn’t even make sense how good they are. Mark just made them with some coconut oil and curry powder and those were delicious too. My fruit bowl has become my delicata squash bowl this month.
