
These healthy nachos are made with gluten-free, corn-free chips without any inflammatory oils and are topped with a dairy-free nacho cheese sauce. A fun movie night meal.
Healthy Nachos With Cashew Cheese
- Siete Chips – Tortilla or Dip Chip
- black beans, heated up
- diced tomatoes
- sliced jalapenos
- diced red onion
- chopped romaine lettuce
- cilantro
- cashew queso dip
CASHEW QUESO DIP
INGREDIENTS
- 1/2 cup unsalted raw cashews, soaked in a bowl of hot water for 45 minutes, I use hot water from the tea kettle
- 1 cup salsa of your choice, store bought or homemade
- 1/8-1/4 tsp turmeric, for color
- 1/2 jalapeno, seeded
- 3 small shakes of cayenne
- pinch of Himalayan salt or sea salt
- 2 TBSP water
METHOD
- Soak 1/2 cup cashews in a bowl of super hot water from the tea kettle for 45 minutes.
- Drain the cashews and add them to a blender. I use the nutribullet for this.
- Along with the cashews, add in 1 cup salsa, turmeric for color, jalapeno & cayenne for some heat, a pinch of salt, and a little water to thin it out some. Blend & Enjoy!
