When you have zero time, you still have time to make an avocado tostada. They are just that easy. You can play around with toppings, but my go-to is a simple avocado tostada. Think avocado toast but on a tortilla. As for a clean store-bought tortilla, I buy Siete Foods gluten-free almond tortilla wraps.
Avocado Tostada
Ingredients
- avocado, mashed up
- red onion, sliced
- large beefsteak tomato, cut into slices
- lime or lemon wedge, squeezed on
- cayenne
- sea salt
- ground pepper
- arugula or chopped up spinach
Method
Add a Siete tortilla to a non-stick pan over medium-high heat. Cook for about 15 seconds each side until it crisps up a bit. Immediately remove and layer on the toppings. First layer on mashed avocado, then sliced red onion, two slices of a large tomato, a squeeze of lime, sprinkle of cayenne, sea salt, and ground pepper. I then top with arugula to get in some fresh greens for the nutrients, digestive benefits, and filling fiber. I usually enjoy one tostada and go back and make a second. ENJOY!
Tidbit: If I’m using the siete tortillas for tacos and want them to bend, I heat them up and flip super quickly so they don’t get too crispy. Otherwise they crumble and won’t fold over properly.
