An easy vegan almond milk eggnog for this time of year. You can also use it as a creamer or a base for other drinks as well. It is thinner in texture than a traditional eggnog, so if you want that thicker consistency, just add in cashews and medjool dates or follow Medical Medium’s Eggnog amazing Recipe. Whatever you choose, I hope you get the warm and cozy festive feeling.
Easy Vegan Almond Milk Eggnog
Makes 4 cups
Ingredients
- 4 cups almond milk, clean ingredient store-bought or homemade (I soak my almonds for almost 24 hrs to get an extra creamy milk, but 12 will work. I do a ratio of 1 cup of almonds to 4 cups of water in this.)
- 2 tsp Ceylon cinnamon
- 3/4 tsp ground nutmeg
- 1 tsp vanilla powder
- 1/4 tsp cardamom, optional
- 1/4 tsp ground clove, optional
- 3 TBSP maple syrup, more to taste
If you want it thicker in texture, add a small handful of cashews as well. You could also substitute pitted medjool dates for the maple syrup. If you add these, you need to blend at least two minutes to get them ground down.
Method
Add everything to the blender and blend well. Taste and adjust spice/sweetness as desired.
⭐️ Grab a pretty glass, pour the nog over a large ice cube, and garnish with a sprinkle of cinnamon.
⭐️ If you are making in advance, shake a little before serving as the spices settle a bit.
⭐️ You can also heat this up on the stovetop and serve it warm. For those that drink alcohol, I heated up one cup on the stovetop, poured it in a glass with a shot of brandy, added a bit more maple syrup, and topped it with freshly grated nutmeg. My girlfriend really enjoyed it.
