
This bright tasting cilantro sauce or dip is reminiscent of True Foods Cilantro Pesto, but with far less oil and salt. I used it as a dip for sweet potato fries and it was a wonderful yin and yang of flavors. It would also make a great sauce paired with bowls similar to the ancient grain bowl that True Foods serves their cilantro pesto with. Grains, sweet potato, roasted onion, snap peas, Portobello, & avocado. It’s so good.

Bright Cilantro Sauce or Dip
Makes about 1/3 cup – 2 servings.
Ingredients
- 1 small bunch cilantro
- 1 large garlic clove
- 1 1/2 TBSP raw pumpkin seeds
- 1/2 orange juiced
- 1 lime
- 1/4 lemon juiced
- 1/2 tsp cumin
- 1/8 tsp sea salt, more to taste
- 1 TBSP olive oil
- 1 TBSP water
Method
Blend everything together. I used my nutribullet for this. Roughly blend or pulse if you want it more like a pesto, otherwise blend until smooth.
