- Flaxseeds

- Mashed Banana – you could even do avocado puree or mashed sweet potato
How To Make a Flax Egg
Mix 1 tablespoon of flaxseeds with 3 tablespoons of water and let it sit for around 5 minutes to thicken.
If you measure quickly, lean towards 2.5-3 tbsp of water instead of 3-3.5 tbsp.

Riane’s Tidbits
My main go-to for an egg replacer in a recipe is a flax egg (my second choice is a chia egg), but depending on your recipe, you can swap for any of the above as well!
The flavor of pumpkin puree can actually be undetected depending on the other ingredients you are mixing it with.
Just note that the mashed banana, avocado puree, and mashed sweet potato options are going to add that taste in whatever you add it to. Make sure the flavor would go well with what you are baking.
The reason I gave up eggs: I used to love scrambled eggs, but once I learned from Medical Medium that while they once were an amazing food, now that we live in a world filled with viral, bacterial, and cancer epidemics, it’s best to avoid them. Eggs feed viruses & pathogens.🙃
I’m still aware that they still sneak in occasional foods when I’m out to eat – eggs are in so much!
