
This lentil sweet potato soup is hearty, nourishing, full of healthy ingredients, and feels so comforting and grounding. It is also fat-free! Serve as is or alongside some crusty healthy bread.
Lentil Sweet Potato Soup
Ingredients
- 8 cups water
- 1 large yellow onion, diced
- 4 large garlic cloves, minced
- 1 super small bunch or 3-4 large ribs/sticks celery, sliced
- 3 small or 2 large carrots, diced (you could also substitute parsnips in Fall)
- 1 large sweet potato or about 3 cups, peeled and diced
- 1 cup dried black lentils, rinsed well
- 1 tsp curry powder
- 2 1/2 tsp cumin powder
- 1 tsp dried thyme
- 1 tsp sea salt or Himalayan salt
- fresh chopped parsley, to serve on top (this adds a lot)
Instructions
- In a large soup pot or a wide deep sauté pan, sauté the onion and garlic in a little bit of water until the onion is translucent.
- Add in the celery and carrots. Sauté for another few minutes.
- Now add in the remaining ingredients except for the parsley. 8 cups water or broth, sweet potato, black lentils, curry powder, cumin powder, thyme, and salt
- Bring it all to a boil.
- Once brought to a boil, lower the heat just a bit so it cooks at a really good simmer. Cook for 45-60 minutes (cover off) watching to see when everything is tender. Give it a stir here and there.
- Remove from the heat to prevent further cooking. The soup will also thicken and absorb more liquid as it sits. Serve topped with fresh parsley. ENJOY this nourishing soup!









Riane’s Tidbits For Lentil Sweet Potato Soup
Sweet Potato Substitute
This recipe includes sweet potato which makes it sweeter, but if you would rather you could substitute for a russet potato. Just know I have not tried this substitution and am guessing you would want to substitute vegetable broth for the water since a russet is much more mild in flavor. I would also use green lentils in place of black lentils with a russet too. Note that black lentils hold their shape while cooking and other lentils lose their shape a bit.

It’s always best to really rinse lentils before putting them in, but I forget once in awhile too. If you forgot, it will still turn out.

To keep it fat-free make sure your broth is free of oil if you use the broth option. Trader Joe’s Hearty Organic Vegetable Broth and Bonafide Vegetable Broth are two clean ingredient broths without any oil in them.Sweet Potato Substitute
