We eat with our eyes first so this banana mango blue butterfly smoothie is extra fun to eat. The pretty bluish purple color comes from a powder called blue butterfly pea flower powder. Say that 10x. 😊 You can think of it as an all natural food coloring that does not contain any of the nasty ingredients that typical food coloring has. Depending on how much powder you use and what ingredients you mix it with, the color changes from different blues to purple.
- The color varies depending on the amount of liquid and ingredients it is mixed with.
- If you add it to hot water, you get a dark blue.
- If you add in an acidic ingredient like lemon or lime, it changes the pH of the water and turns it purple.
- Whatever I mix it with, I like to start with a 1/4 tsp and see what color it turns into before adding in more.
- It’s a fun one for kids and big kids!
