20 Healthy Quick Meal Ideas

Just some pictures of 20 healthy quick meal ideas when you don’t know what to make or need some inspiration. Most of these are extremely simple as the theme here is QUICK. Also, a lot are similar meals, but I figured it couldn’t hurt to add more pictures.

Just fruit! Easiest meal of all! A whole mini watermelon or whole pineapple is one my favorite quick meals for breakfast or even lunch sometimes.

Green smoothies are such a great go-to and an easy way to pack in the greens. Water, spinach, banana, apple, lemon, ginger is always a good one. Or maybe water, spinach or kale, banana, frozen mango, lime & ginger. Play around with what you feel like and have on hand.
Heated up chickpeas with arugula, leaks, avocado, raw garlic, lemon juice, sea salt, pepper, cayenne – fresh tomatoes would be good in this too
Italian parsley, chickpeas, grape tomatoes, artichokes, avocado, lemon juice, sea salt, ground pepper – I also tossed in a chopped medjool date or two, but a small honey drizzle would add some sweetness too if desired.

Kale, avocado, raw garlic, lemon juice, sea salt, pepper, and cayenne. Mix well with your hands or tong together well. Don’t knock this simple salad until you try it. 🙂
collard green salad wraps with a tahini maple syrup dressing for dip
GF, corn-free pasta tossed with a mixture that I heated up in a sauce pan- Kalamata olives, tomatoes, red onion, garlic, little olive oil, dried basil & oregano, sea salt & ground pepper
I spiralized a large zucchini and added the zoodles, a package of rinsed hearts of palm noodles, raw garlic, a few tomatoes, dried basil, Himalayan salt & ground pepper to the stovetop. I heated on low until it was slightly warm.
Chia Pudding – 1 cup of homemade almond milk, 3 tbsp chia seeds, 1/2 tsp ceylon cinnamon, 1/4 tsp cardamon and raw honey to taste – add everything to a 16 oz mason jar – shake well and refrigerate for a few hours or overnight until it solidifies. It takes about 1 minute to make, so just prep it in advance and you are good to go for a later meal. Pictured: I added unsweetened coconut shred, raspberries, and cinnamon. Generally I just eat it as is though.
Cocojune yogurt or Cocoyo with fresh fruit & ceylon cinnamon

If you have an air fryer or you already have steamed potatoes made in your fridge, cut some potato slices and bake/air-fry them for a bit. Add on mashed avocado, sprouts, red onion, tomato, and a squeeze of lemon juice.

Make a batch of hummus for the week so come time when you’re hungry, you can just chop some fresh veggies and eat! Shown is my zucchini hummus and beet hummus.
Boiled sweet potato noodles (drained
& rinsed) tossed with steamed peas, shredded carrots, scallions, and this yellow curry paste
Make a batch of steamed yellow potatoes to keep in the fridge. Heat a few up come time and top with a little avocado if desired. Serve alongside steamed peas and fresh tomatoes if you want a more rounded meal. 🙂
Trader Joe’s Red Lentil Pasta mixed with Whole Foods 365 Pizza Sauce or clean sauce of your choice and steamed peas. I love to add oregano, thyme, and cayenne to jarred sauce too.

Steamed red potatoes heated up in the oven. Smash down and top with lentils and steamed peas. I generally make my own lentils from dried lentils, but for last minute this is a good brand for canned lentils.
There are so many sweet potato varieties. Japanese and Purple stokes are my favorite kinds to eat as is. Serve with a side of steamed broccolini.
Cucumber with a side of quick guacamole – mashed down avocado, raw onion, tomatoes, garlic, lemon juice, cayenne, sea salt & pepper. Cucumbers are high water content which helps us feel more full too.
Smoothie bowls with frozen fruit. I don’t know what I mixed in this day, but here is a smoothie bowl recipe.
